Roasting is satisfying way to cook a whole fish. Even though a whole fish can be intimidating, roasting one is easy and delicious. This class will walk you through all the steps: how to select the fish, to season it, to carve and serve your roasted fish dinner. We will roast two types of whole fish: red snapper with lime herb salsa, and branzino with orange, fennel and capers. We will carve and enjoy our roast fish with baby potatoes and a citrus-avocado salad.`.
